JUICIN’ UPDATE: You guys are incredible. Juicin’ has flown out of here in a completely unprecedented way over the last few hours. We have sold out the online store, and have only a very limited amount of cans left in retail (for now) but more is coming soon, and we’re currently well stocked for pints and growler fills at the Saloon! Welcome back old friend. Titania is bourbon-barrel-aged and takes a big, bold beer and makes it even bigger and even bolder. We aged our Long Dark Voyage to Uranus Imperial Stout in Heaven Hill Kentucky Bourbon barrels to bring you this smooth, seductive slice of midnight. To make this year’s release unique we included cold brew coffee, vanilla, lactose and cayenne pepper to enhance the creamy mouthfeel and fudge-like characters of Titania Vintage 2017.

Using a recipe very similar to our Gateway Kolsch as the base, it gives us a blank canvas on which to create a new beer. In this instance, we pitched Brett D during primary fermentation to see how the flavour was affected. The results are fantastic. You still get the drinkability of our Kolsch, with its mild, cracker malt body and light bitterness, but added to that is a distinct Brett farmhouse aroma. Slightly citrusy, like overripe pineapple it’s pleasant and approachable. The flavour contains much of the same characteristics, mild malt with a distinctly fruity middle and very dry finish. It’s not overwhelming, but gives you a good idea how a secondary Brett fermentation can affect an otherwise clean beer.

And while on earth for one of those trips, Toftorg grew fond of the rich, robust stouts of Northern England. Designed to withstand the grueling intergalactic voyage from Earth to Uranus, "Long, Dark Voyage" is a Uranal Stout of the highest order. Sawdust City Brewing Company has brewed a beer using a yeast strain collected from Muskoka. On May 1st, 2015 Sawdust City Brewers and Escarpment Lab technicians collected a viable, alcohol-tolerant yeast strain from the Limberlost Forest and Wildlife Reserve near Huntsville, ON. To keep the ingredients as local as possible the beer also contains hops from Clear Valley Hops in Collingwood. The beer will be can- conditioned. Can-conditioned ales are a live product, canned with a small amount of yeast that provides additional fermentation that adds flavour. Sawdust City is one of a few Canadian breweries that produce can-conditioned beers.

Our Long, Dark Voyage to Uranus aged in bourbon barrels. After one of his many voyages to Earth, Toftorg Golshop, The Ruler of the Third Empire of Uranus, returned home with an abundance of his beloved Long Dark voyage to Uranus stout. He decided to store his bounty in wood barrels for future consumption. During a recent vacation on Uranus’ largest moon, Titania, Toftorg brought some of that barrel-aged stout with him. One fine night, upon opening it, he found the beer had miraculously matured into a ludicrously, luscious liquid. Oozing with velvety vanilla and calming coconut, the mouthfeel was as soft as silk and the finish was satisfyingly smooth.
