We produce traditional ales in an array of styles, but there is nothing traditional about the flavour. Our brewmaster, Sam Corbeil, and his talented team create award-winning exciting beers that expand the borders of traditional flavour profiles. The rule at Sawdust City is there are no rules. Sawdust City Brewing Company has brewed a beer using a yeast strain collected from Muskoka. On May 1st, 2015 Sawdust City Brewers and Escarpment Lab technicians collected a viable, alcohol-tolerant yeast strain from the Limberlost Forest and Wildlife Reserve near Huntsville, ON. To keep the ingredients as local as possible the beer also contains hops from Clear Valley Hops in Collingwood. The beer will be can- conditioned. Can-conditioned ales are a live product, canned with a small amount of yeast that provides additional fermentation that adds flavour. Sawdust City is one of a few Canadian breweries that produce can-conditioned beers.

Our Long, Dark Voyage to Uranus aged in bourbon barrels. After one of his many voyages to Earth, Toftorg Golshop, The Ruler of the Third Empire of Uranus, returned home with an abundance of his beloved Long Dark voyage to Uranus stout. He decided to store his bounty in wood barrels for future consumption. During a recent vacation on Uranus’ largest moon, Titania, Toftorg brought some of that barrel-aged stout with him. One fine night, upon opening it, he found the beer had miraculously matured into a ludicrously, luscious liquid. Oozing with velvety vanilla and calming coconut, the mouthfeel was as soft as silk and the finish was satisfyingly smooth.
