Our new @ssbrewtech 5-barrel pilot brewery has finally arrived! And what an uplifting sight to see after a rather stressful couple of weeks. We will be using this small pilot brewery to develop new recipes, try experimental hop varieties, conduct research, and provide something cool for our customers to look at while hanging out in our Windsor pub. Just attended this heartfelt celebration and photo-op on the Windsor Town Green! PG&E finally turned our gas back on today! The first thing we did was brew Sonoma Pride in honor of all the first responders helping our entire community battle the #kincadefire. This beer will be released in about a month on draft and in bottles at our pubs. More details coming soon. In the meantime, please visit us at the Windsor brewery tomorrow. Still no sign of PG&E at the brewery, but we are planning to open for beer and wine only from NOON to 8PM today! @jamsjoybungalow food truck will be on site from 1PM to 7PM. Their menu looks delicious! Our Gift Shop will also be open starting at NOON. Scheduled tours will continue to run as planned. Meanwhile, our Santa Rosa pub is still fully operational! Happy Hops was originally brewed by the Grace Brothers Brewery in 1944 right here in Santa Rosa! Their brewery went out of business in the 1960’s, but we wanted to resurrect “Happy” and a new fun beer for him to enjoy! It is also a way for us to pay homage to the Grace Family and their brewing pioneer history. Happy Hops is an incredibly hoppy India Pale Ale with an immense hop aroma and flavor and a mild bitterness.

This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer!
