This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer!

In the late 1990’s, hop breeding pioneer Chuck Zimmermann provided his protégé Jason Perrault with a unique hop plant. Chuck provided few details other than it was a wild hop from the southwestern U.S., a specimen of the taxonomic variety of hops called neomexicanus. It was rank and wild, a late bloomer that would not produce cones until late in the season, if at all. The plant fascinated both Jason and his plot manager at the time, Marco Ramos. So much so that Marco nicknamed it, affectionately referring to it as “Chuck’s Mexican”, a nod to its taxonomic status and southwestern roots. In August 2004, with crossing for the season done and with surplus pollen on hand, Jason noticed that there was still one plant in a flowering stage receptive to pollination. The plant was Chuck’s Mexican. Jason and Marco took all the excess pollen they had, mixed it, and let the wind do the work. The result was a diverse family of several hundred half-wild daughters, they did not know what to expect. Three years later while conducting field evaluations of the family, Jason noticed a plant with a unique aroma. Intrigued by the tropical and stone fruit aroma of this variety, Jason gave a sample to homebrewers Karl Vanevenhoven and Derry Jefferis. The following harvest, Karl & Derry sought out single hill from which this experimental hop plant grew. In reference to the plant’s background, and with no other way to identify the hop other than a number, Karl and Derry nicknamed it “Ron Mexico”.

Since 2012 Natalie and Vinnie have been eyeing experimental hop HBC-692 at the experimental hopyard at Select Botanical’s in Yakima, WA. It particularly struck a chord with them because of its distinctive pink grapefruit aroma. One of the highlights of the their annual trip to Yakima for hop selection is “rubbing” or smelling this hop. We chose to brew an India Pale Lager to really showcase the hop character. Apical Dominance has a beautiful grapefruit and melon aroma, with mild bitterness, and a lingering finish.

Dark Ale aged in Cabernet Sauvignon barrels from local wineries. It is aged for 4 to 8 months with black currants, brettanomyces, lactobacillus, and pediococcus added to each barrel. Rich flavors of chocolate truffle, spice, tobacco, currants, and a bit of Cabernet. Very full-bodied, sip slowly!

Blonde Ale aged in used Chardonnay barrels from local Sonoma County wineries. It is aged for about 9 to 15 months (depending on the age of the barrel) with lots of brettanomyces, lactobacillus, and pediococcus added to each barrel. Medium bodied with hints of oak and Chardonnay, funky brett characteristics, with a nice, long sour finish.

100% Simcoe hops make up this beer from start to finish! It is named for the location in the experimental hop yard in Yakima, WA, where it was first created. Simcoe is grown by 3 families in the Yakima area, from all of whom we buy this particular hop (and other hops) — Carpenter, Perrault, and Smith. This is one of several beers we plan to make in our NEW “Hop Grower’s Series” highlighting certain hops from our growers! It has that trademark Simcoe nose with citrus and pine, nice bitterness and tasty hop flavors round it out.

Happy Hops was originally brewed by the Grace Brothers Brewery in 1944 right here in Santa Rosa! Their brewery went out of business in the 1960’s, but we wanted to resurrect “Happy” and a new fun beer for him to enjoy! It is also a way for us to pay homage to the Grace Family and their brewing pioneer history. Happy Hops is an incredibly hoppy India Pale Ale with an immense hop aroma and flavor and a mild bitterness.
