The first brew of our new sour project ‘Ta Loco (slang for Esta Loco or you are cray). This imperial sour blonde ale uses golden promise malt, Belgian candi, and lastly manadarina bavaria and hallertau blanc hops. It was soured using five lacto cultures with oak staves and 66 pounds of Wilcox peaches ( cut in half and added). This stonefruit bomb was then fermented with a wild yeast from Colorado. The aroma has tons of acid and stonefruit on the nose with hints of oak and vanilla tannins. Stonefruit and tartness flood the palate. Get ready for even crazier flavors from the ‘Ta Loco project!
