On top of serving up some mouthwatering dishes from our kitchen, she prepares delicious jams often used to accompany a variety of cheeses on our cheese boards. Our production team blended in some of Chef’s boysenberry jam into a golden sour beer. Sweet and puckeringly sour, this late Spring fruit lends itself beautifully to both beer and food! To pair with the jammy sour, Chef has prepared a scrumptious spicy pork cake dish topped with smoked and creamed corn, fresh boysenberry, basil, & pickled watermelon rind. Savory, slightly smokey, with a hint of sweetness and acidity, this dish is a perfect balance of hearty and light. We blurred the lines and now we’re gearing up for Saturday’s bottle release of our beer/wine hybrids Blurred PsM and Blurred M! Blurred PsM has an expressive saison foundation, is lighter body and has low tannin. The mix of second use Petite Sirah and Merlot grapes are still very expressive and lend a bouquet of fresh strawberry and black pepper with notes of mixed berry preserves, and a hint of lemon rind to this beer. Limit 4 at $23/750mL Blurred M is rich and full body with high tannin and wine-like acidity. We named this beer Ensorcelled (which means "Enchanted"), because Jay, our Director of Brewing and Blending, was enchanted by this beer throughout the barrel aging process. As Jay would taste through our first batches of our young sour beers, he kept going back to Ensorcelled and expressing how this was one of our best sours in the barrel cellar. After months of tasting through our barrels, and months of consistently coming back to Ensorcelled, Jay and the team became enchanted with this sour dark sour with raspberries.

About half of the barrels used in this blend were fermented with Brettanomyces yeast and Lactobacillus bacteria. We wanted to accentuate the smooth chocolate notes and dial back the acidity prior to adding the cherries, so we blended in a dark non-sour beer that was fermented with English Ale yeast. The addition of the tart cherries adds a bright stone fruit character that counters the rich base of this dark sour and creates one lucid thought.
