2017 vintage of the award winning beer. Decadent, rich, and jammy, Ensorcelled will remind you of a chocolate raspberry tart dessert. We named this beer Ensorcelled (which means "Enchanted"), because Jay, our Director of Brewing and Blending, was enchanted by this beer throughout the barrel aging process. As Jay would taste through our first batches of our young sour beers, he kept going back to Ensorcelled and expressing how this was one of our best sours in the barrel cellar. After months of tasting through our barrels, and months of consistently coming back to Ensorcelled, Jay and the team became enchanted with this sour dark sour with raspberries.

Shadows of Their Eyes is back and even better than years past. This iteration of Shadows was fermented with the Funktown Pale Ale blend from The Yeast Bay (a yeast blend consisting of a Vermont Ale strain and wild strain of Saccharomyces) which resulted in a beer that is chocolate forward from the grain bill with low notes of peach, cherry pit, mango, and orange peel. We then aged this beer in oak barrels and acidified with a mixed culture. Low in acidity this sour lets the base malt shine with a fermentation profile that enhances the dark chocolate notes and adds hints of stone fruit and citrus.

Blended by our friends Dave Keene and Chad Calvery, Garage Service is a toast to a legendary craft beer institution. Much like the eclectic character of the Haight, Dave and Chad chose barrels that showcased a spectrum of base malts, fermentation techniques, and fruits. Served with a side of grit, Garage Service is a blend of gold and red sour beers aged in oak barrels with plums and prickly pear that drives notes of candied plums, dried berries, and orange peel. This beer pairs well with cigars at 543 or any 30th Anniversary you might find yourself celebrating!

This beer was made in collaboration with our friends from Perennial Artisan Ales in St. Louis, Missouri. After coming together to select a unique blend of barrels ranging from open-fermented Saison to dry-hopped brett beer, we dosed the base with a touch of black lime. This yielded an incredibly unique brew with an almost earthy depth of flavor that complements the notes of passion fruit, papaya, and limeade. The exploration of styles and ingredients defines both of our breweries, and this beer undeniably exudes that sentiment.

To extract sweet and tart notes of berry pie filling, we fruited each oak barrel with 42 pounds of blueberries and 42 pounds of boysenberries. We then infused this jammy sour with cinnamon and a touch of vanilla bean to simulate the flavors and aromas found in a pie crust. Seditious Ways is a blend of dark sour beers aged in oak barrels with tart cherries. This blend consists of two different batches of dark beer. About half of the barrels used in this blend were fermented with Brettanomyces yeast and Lactobacillus bacteria. We wanted to accentuate the smooth chocolate notes and dial back the acidity prior to adding the cherries, so we blended in a dark non-sour beer that was fermented with English Ale yeast. The addition of the tart cherries adds a bright stone fruit character that counters the rich base of this dark sour and creates one lucid thought.
