“… de Kleine Rosse van Brabant, mochten we daar terug mee kunnen brouwen, doen we het gelijk in den tijd”, sprak Armand een tijdje terug. Deze oude tarwevariëteit werd vóór de industrialisatie van de landbouw wijdverspreid verbouwd in en rond het Pajottenland en werd door de lambikbrouwers van oudsher gebruikt als ongemoute brouwtarwe. Helaas is dit ras (bijna maar hopelijk niet) onvindbaar geworden. Gedreven door een gedeelde visie van een thesisstudent, zijn promotor-professor aan de ULB, enkele gepassioneerde biologische landbouwers-pioniers en 3 Fonteinen zijn we nu samen aan het bouwen aan een lokaal granennetwerk rond biologisch geteelde oergerst- en -tarwerassen. Deze visie houdt in dat we teruggaan naar een waardevol landbouwmodel voor het Pajottenland, zowel op het vlak van de kwaliteit van de granen eerder dan maximale opbrengst per hectare, de natuurlijke verrijking van de bodemgrond en een eerlijke verloning voor de landbouwer en kennisuitwisseling tussen de landbouwers onderling en met de verschillende afnemers zoals brouwerijen, mouterijen, molenaars, bakkers… Dit project werd twee jaar geleden ingezet en ondertussen zijn de eerste brouwsels met Pajotse granen achter de rug en zijn de voorbereidingen op het land voor het volgende oogstseizoen al volop aan de gang! Zo hebben we ook al een 20-tal oude tarwerassen gevonden die we nu verder gaan vermeerderen, maar dat zal nog meer dan vijf jaar duren vooraleer we daar de eerste resultaten van zullen kunnen zien en proeven. Het is niets minder dan onze ambitie om van het Pajottenland terug de graanschuur voor onze lokale (lambik)bieren te maken, net zoals het ooit geweest is! ---------- “…the Kleine Rosse van Brabant, if only we could brew with that [wheat] again, we would do it like back in the (old) days”, Armand spoke a while back. This old wheat variety - literally translated as the Little Ginger of Brabant, referring to the specific look of the wheat grain and the former historical region – was cultivated extensively in and around Pajottenland before the general industrialisation of agriculture. It was traditionally being used as the unmalted brewing wheat by lambic brewers. Unfortunately, this variety is (nearly but hopefully not) impossible to find nowadays. Driven by a common vision of a graduate student, his promotor-professor at the Université Libre de Bruxelles, a handful of organic farmers-pioneers and 3 Fonteinen, we are now building a local cereal network around organically grown barley and wheat varieties original to Pajottenland. This vision entails the return to a valuable agricultural model for Pajottenland with regards to crop quality rather than volume maximisation, a natural enrichment of the soil and a decent remuneration for the farmers’ craft and knowledge exchange between farmers and with different buyers such as breweries, malt houses, mills, bakers… This project was initiated two years ago and meanwhile, the first brews with local Pajottenland cereals were completed while preparations for the following field harvest are ongoing! The cereal network already tracked down and started multiplying more than 20 old wheat varieties, but it will take another five years at least before we will be able to see and taste the first results. Our ambition is nothing less than to make the Pajottenland the cereal barn for the local (lambic) beers again, just like it was before!
