Felix De Boeck (1898-1995) was een landbouwer en modernistische kunstenaar-schilder uit Drogenbos. Zijn bekendste schilderijen zijn wellicht de “Nachtlichten”: een reeks van een 40-tal werken geïnspireerd door het licht en nachtelijke landschappen vertaald naar de plaatselijke gemeenten, waaronder Beersel en Lot. Geïnspireerd door het leven van Felix De Boeck en dit mooi stukje lokaal cultureel erfgoed, gebruikte Armand één van deze werken op de allereerste 3 Fonteinen Oude Geuze Vintage, gebotteld in 1998 en uitgegeven in 2003, ter gelegenheid van het 50-jarige bestaan van 3 Fonteinen. Deze traditie wordt verdergezet met de lancering van twee vintage flessen: - 3 Fonteinen Oude Geuze Honing 2015 in 75 cl en gebotteld op 12 januari 2015. Dit is een klassieke assemblage van lambikken van één, twee en drie jaar oud. De jonge lambik werd op het koelschip geïnfuseerd met lindenhoning. - 3 Fonteinen Oude Geuze Cuvée Armand & Gaston Vintage in magnum formaat en gebotteld op 8 oktober 2015. Dit is de derde assemblage van Cuvée Armand & Gaston ooit. Beide flessen zijn geëtiketteerd met twee verschillende werken van de “Nachtlichten”-reeks en komen in een aangepaste cadeauverpakking, inclusief een gratis toegangsticket voor het FeliXart museum en een gratis 3 Fonteinen pin. Een ideaal geschenk voor de Feesten! Een deel van de opbrengsten wordt aan het museum geschonken. Op deze manier draagt Brouwerij 3 Fonteinen bijaan en steunt het het structurele behoud en onderhoud van het cultureel patrimonium van Felix De Boeck. +-+-+-+-+- Felix De Boeck (1898-1995) was a farmer and modernist artist-painter from Drogenbos. His most famous paintings are probably the “Nightlights” (“Nachtlichten”), a series of about 40 works, inspired by the light and nightly landscapes reflected on local villages, among others Beersel and Lot. Inspired by the life of Felix De Boeck and this beauty of local cultural heritage, Armand used one of his paintings on the very first 3 Fonteinen Oude Geuze Vintage, bottled in 1998 and released in 2003, celebrating the 50th anniversary of 3 Fonteinen. This tradition is now continued with the release of two vintage bottles: - 3 Fonteinen Oude Geuze Honing 2015 in 750 ml and bottled January 12th 2015. This is a classical blend of one-, two- and three-year old lambics. The young lambic was infused with linden honey on the coolship - 3 Fonteinen Oude Geuze Cuvée Armand & Gaston Vintage in magnum format and bottled October 8th 2015. This is the 3rd blend of Cuvée Armand and Gaston ever. Both bottles are labelled with two different paintings of the “Nightlights” and come in an adapted gift package, including a free entrance ticket to the FeliXart museum and a free 3 Fonteinen pin. An ideal present for the Holidays! Part of the proceeds will go to the museum. This way, 3 Fonteinen supports the structural preservation and maintenance of the cultural heritage of Felix De Boeck.

A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks. 3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. The Golden Blend is made with 4 year old Lambic that accounts for 25 % of it’s contents, the rest of the blend is made up by a "secret" combination of 1, 2 and 3 year old Lambic. The exact mixture is only known by the master-blender Armand himself. The name "Golden Blend" is not far away from the truth, in fact, the 4 years of maturation in oak-wooden barrels is making this particular Lambic very expensive. Due to the "evaporation" through the barrels, only a small percentage of the lambic is left over after 4 years of maturing.

With the first version of Zenne y Frontera, 9 Oloroso barrels and 3 PX barrels were filled with young lambic. After one year of oak maturation, the characteristics of the finest of sherries and the 40 year old casks integrated with the 3 Fonteinen lambic. Only half of the volume of all casks was blended and bottled and the barrels were filled again with young lambic - our interpretation of the "solera" method. For this second edition, again only half of all barrels was blended and bottled. After another 17 months of bottle maturation, the average age of this naturally refined traditional lambic beer is more than 45 months. This batch is limited to 3,000 bottles.

3 Fonteinen Oude Lambik is the result of a specific brewing process with a high proportion of unmalted wheat, spontaneous fermentation in an open coolship, and slow and complex fermentation and maturation in oak barrels of different sizes and shapes. This beer is completely flat as the carbonation evaporates through the wooden staves. Please note the age of the sample you are reviewing when entering your rating. 3 Fonteinen Oude Lambik is considered all 3 Fonteinen lambic above 18 months of oak barrel maturation after brewing, and every lambic blend served just prior to its bottling. It is poured locally around the brewery, in some selected places, and in the lambik-O-droom on dedicated hand pumps. As it is unfiltered and unpasteurised, the time between the oak barrel and the moment of serving is kept as short as possible. “Twist of Fate” is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. It allows us to enter the wild lambik playground in our own way. The 7th iteration features a range of fruit macerations on freshly emptied Bordeaux barrels from Châ¬teau Pabus. These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself.
