Today at 3pm, we're releasing the 2019 batch of OFFERTORY, our barrel blended mixed-culture ale aged on grape pomace. Every year, we release multiple versions of a beer called Sacrament, which is aged on various Washington grown grape varietals. Once the Sacrament barrels are emptied, we keep the grape pomace in the barrels and immediately fill them with a finished blend for a quick 24hr contact time (similar to Rosé), and that beer becomes Offertory. The 2019 blend of Offertory is a blend of two separate mixed fermentation Saisons that were fermented and aged in oak. The blend was then transferred onto Cabernet and Carmenere grape pomace before being bottle conditioned with Brett. $17/bottle, 4 bottle limit per person. We'll also have a single keg of Offertory on tap when we open at 3pm. All bottle and draught sales will be available in the Taproom.

This Friday, May 3rd at 12noon, we'll be releasing a new batch of Five of Swords on draft and in growlers, as well as cans of Ten of Swords & High Priestess, and bottles of 2019 King's Head. FIVE OF SWORDS IPA (7% abv) is an annual collaboration with our main dudes Shane & Don from E9 Brewing Co. in Tacoma. This year's batch of Five of Swords is DRAFT ONLY and will be available exclusively at the Holy Mountain Taproom and the brand new E9 Taproom in Tacoma. Five of Swords was brewed with Two Row, Pilsner Malt, Chit Malt, and Malted Spelt. It was hopped aggressively with Idaho 7, Citra, and Nelson Sauvin. The beer will be flowing in the Taproom when we open at noon and we'll have 32oz pre-filled growlers available to-go as well. $12/32oz, 2 growler limit per person TEN OF SWORDS DIPA (8.5% abv) is, again, a collaboration with E9 - a bigger, more intense Double IPA brewed with German Pilsner malt, Two Row, Flaked Oats, Malted Oats, and Flaked Barley. It was hopped with ridiculous amounts of Simcoe, Mosaic, and Citra, and it also ran through a hop back of Simcoe whole leaf hops. Ten of Swords will be a CAN ONLY release and will not be available on tap at either location. $22/16oz 4-pack, limit 2 x 4-packs per person HIGH PRIESTESS (5.8% abv) is a phenomenally tasty Export Pilsner brewed in collaboration with our friends from Oxbow Brewing Company in Maine. It was brewed with a specialty German Pale Malt and Chit Malt and hopped exclusively with German Spalter Select. Available on tap and in cans to go. $18/16oz 4-pack, limit 3 x 4-packs per person 2019 KING'S HEAD (11% abv) is our Double Oatmeal Brown Ale brewed with a large portion of malted and unmalted oats. It was fermented with an expressive English Ale strain and then transferred into freshly emptied Kentucky Bourbon Barrels. The 2019 blend incorporates barrel stock from 2017 and 2018, as well as a portion of fresh King's Head base. $18/500ml, 3 bottle limit per person Can/Bottle sales will be available through the alley (WEST) entrance of the brewery. Five of Swords growlers will only be available in the Taproom, not in the can/bottle line. Thanks and we hope to see you Friday!

A few weeks ago, we made a Maibock with our pals @varietalbeerco. Located in the heart of Hop Country in Sunnyside, WA. They’ve been cranking out some awesome beer the last year or so. Eichebock is an entirely oak fermented and lagered Maibock, in a combo of bourbon barrels that we had recently emptied. We’ll be pouring this collab at the First Annual Goatfest, along with these other great brewers And their creations, on Saturday May 11th, at Varietal Brewing Co. It was fermented with one of our favorite British strains and then dry-hopped with more Vic Secret, Motueka and Citra.

New Jerusalem started as a blend of oak aged, mixed fermentation beers, and was then racked on top of an enormous amount of Robada Apricots grown by our friends at Gilbert Orchards in Yakima, WA. The Goat is our rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in our foudre with two saison strains and brett, then allowed to age for three months. The Goat was refermented in the bottle with brett, and has been conditioning for four months. Although we plan to brew The Goat again, there will never be a batch like this, and we don’t have immediate plans to ferment another batch in the foudre or to age it for so long before release. This batch has white wine notes from the brett, opening up with pear, mint, and oak. Bone dry and 4.9% ABV, this beer is wonderfully effervescent, perfect for summer drinking.
