Today we're tapping a new IPA! WASTED YEARS was brewed with Pilsner malt, malted white wheat, Two Row, and dextrose sugar. It was hopped with Experimental 630 & 692, along with a bit of Chinook. After going through fermentation with an expressive English strain, it was heavily dry-hopped with more 630 & 692. Available on tap and in crowlers to go when we open at 3pm.

This Friday, February 14th at 12noon, we'll be releasing bottles of 2020 Midnight Still and 2020 Bonne Nuit MIDNIGHT STILL is our Imperial Stout aged in bourbon barrels. The 2020 blend incorporates stock of Imperial Stout aged in Kentucky bourbon barrels for 9 months and 16 months. $20/500ml bottle, 3 bottle limit per person, per day BONNE NUIT is an annual collaboration with our friend and beer-itual advisor, Jerome Seipp. It's brewed in the tradition of Belgian Strong Ales, but hopped in the American tradition with Centennial, Cascade, and Columbus. This version was then aged in Kentucky bourbon barrels until ready. $16/500ml bottle, 3 bottle limit per person, per day Kegs of Midnight Still and Bonne Nuit will also be on tap when we open at 12noon on Friday, and we should have enough to last throughout the majority of the weekend. Also, as a special Valentine's Day treat, we'll be tapping a cask of MIDNIGHT STILL INFUSED WITH RASPBERRY & CACAO, which will be available at the bar until it's gone. Bottle sales will be available through the alley (West) entrance of the brewery. CREDIT/DEBIT CARD ONLY for bottle purchases, and we will require a MATCHING ID with every purchase PARKING: PLEASE READ!! In case you haven't been to the brewery in the last few months, we've had an expanding encampment that's taken over the South end of our block (old Dog Lounge building). BNSF Railway has been actively posting 24hr Tow Notices on any vehicle parked along the barriers by the railroad behind our building. Please keep in mind that none of the parking along the railroad is property of Holy Mountain, and we cannot be held responsible for any tickets, notices, towing, or stolen property when you park your vehicles along the train tracks, so park at your own discretion. Today we're tapping CHAOTIC ATTRACTOR, a new Foudre-Aged Brett Double IPA. Chaotic Attractor was brewed with Two Row, Pilsner malt, and a large portion of oats and flaked barley. It was hopped aggressively with Citra, Mosaic, and Simcoe, and fermented in stainless. Once primary fermentation was complete, it was transferred into one of our oak foudres, where it continued to condition with a house Brett culture for 4 months. Finally, it was dry-hopped with large quantities of Citra, Mosaic & Simcoe.

Oh shit - we at it again!! Thank you SO MUCH to everyone who came out yesterday and for the positive attitudes and good vibes all around. Day 2 of our 5th Anniversary celebration starts today at 12noon, and we've got another surprise release: PRIMORDIAL SKY Double IPA. Primordial Sky was brewed with Two Row, Pilsner malt, malted spelt, flaked barley, and malted oats. It was hopped with insane amounts of Simcoe, Mosaic, Galaxy, and Idaho 7, and dry-hopped with more of the same. 16oz 4-packs will be available when we open ONLY IN THE OUTDOOR BEER GARDEN so that we can keep draught service as smooth as possible in the Taproom. $22/4-pk, 1 x 4-pack per person Primordial Sky will be on tap in the Taproom and the Beer Garden, and we'll have a limited amount of t-shirts available in the Taproom as well. Just a reminder that parking is limited, so please take public transit or Uber/Lyft if possible. Our friends @lilwoodys are parked out back and they'll be ready to sling some food for everyone when we open at noon. Hope to see you soon!

The Goat

The Goat is our rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in our foudre with two saison strains and brett, then allowed to age for three months. The Goat was refermented in the bottle with brett, and has been conditioning for four months. Although we plan to brew The Goat again, there will never be a batch like this, and we don’t have immediate plans to ferment another batch in the foudre or to age it for so long before release. This batch has white wine notes from the brett, opening up with pear, mint, and oak. Bone dry and 4.9% ABV, this beer is wonderfully effervescent, perfect for summer drinking. Many thanks to our friend Brian Steely for the illustration and to our friend Jordan Butcher for additional label design.

Call of the Void started as a wheat blonde base that was fermented in a mix of Washington red wine barrels with a blended house wild culture. It was then transferred into oak puncheons on top of massive amounts of black currants and blackberries, where it underwent a secondary fermentation before bottle conditioning with Brettanomyces.
