This Friday, June 15 at 12noon, we're releasing bottles of Temple of Heaven and Low Mass TEMPLE OF HEAVEN is a blend of barrel aged beers fermented in oak with a variety of wild cultures. The blend was then transferred into a stainless tank on top of massive amounts of fresh nectarines from Eastern Washington, where it went through a secondary fermentation under pressure for 3 months. Bottle conditioned with Brettanomyces. 6.5% ABV $20/750ml, 3 bottle limit per person, per day LOW MASS started as a blend of multiple barrel aged and barrel fermented mixed culture Saisons. The blend was then transferred into former Sauvignon Blanc barrels, where it continued to age for 6 months on Riesling grapes grown by our friends at Gilbert Vineyards in the Yakima Valley. It was then lightly dry-hopped with a beautiful lot of Nelson Sauvin. Refermented in the bottle with Brettanomyces. 6.5% ABV $17/750ml, 2 bottle limit per person, per day Kegs of Temple of Heaven and Low Mass will also be on tap when we open at noon on Friday. Bottle sales will be available starting at 12noon through the alley (WEST) entrance of the brewery. Please NO DRINKING in line or anywhere outside of our building and please no line cutting. We also ask that everyone be mindful of any "No Parking" signs in neighboring lots as your vehicles can be towed if parked in clearly marked spaces. Thanks and we hope to see you Friday!

Oak Fermented Simcoe Pale Aged on Spanish Cedar Lower World was brewed with Pilsner Malt, two row, and wheat malt, and hopped late in the kettle with Simcoe. It was fermented entirely in oak puncheons with one of our house mixed cultures. After primary fermentation, the beer was then transferred into another set of puncheons lined with Spanish Cedar staves, where it continued to condition for an additional 6 weeks.

This blend was also transferred into oak barrels from our friends at JB Neufeld on top of crushed Malbec grapes from Doc Stewart Vineyard in Yakima, WA. After going through a secondary fermentation on grapes, it continued to age in oak for a number of months before blending and bottling. Bottle conditioned with Brett.

The Goat is our rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in our foudre with two saison strains and brett, then allowed to age for three months. The Goat was refermented in the bottle with brett, and has been conditioning for four months. Although we plan to brew The Goat again, there will never be a batch like this, and we don’t have immediate plans to ferment another batch in the foudre or to age it for so long before release. This batch has white wine notes from the brett, opening up with pear, mint, and oak. Bone dry and 4.9% ABV, this beer is wonderfully effervescent, perfect for summer drinking. Many thanks to our friend Brian Steely for the illustration and to our friend Jordan Butcher for additional label design.
