Thanks to Bloomberg and our friend Justin for including us in this list of awesome beers. Vesper often gets overlooked due to its simplicity and low abv, but it remains one of our personal favorites and a great option for pairing with a wide range of food. Also, special props to our good buddies at Wayfinder Beer for making the list as well!

Along with the new bottles we're releasing tomorrow, we'll also be rolling out some new merchandise just in time for the holidays! Our new Barrel Stave Bottle Openers were made by our good friend Josh using one of our used bourbon barrels (specifically an ex-bourbon, ex-Westland, ex-Deadfall barrel). Only 90 of these will be available, so we'll be limiting them to 1pp at $22/each. We also have a new run of 12oz brandy snifters available. Again, this is a limited run, so 2pp at $10/each Bonne Nuit shirts and a small run of hoodies with be available as well. All merchandise will be available in both the Taproom and the bottle release line while supplies last.

This Friday, December 14th at 12noon, we'll be releasing bottles of New Jerusalem and 2018 Bourbon Barrel Aged Bonne Nuit. NEW JERUSALEM started as a blend of oak aged, mixed fermentation beers, and was then racked on top of an enormous amount of Robada Apricots grown by our friends at Gilbert Orchards in Yakima, WA. It then went through a secondary fermentation on the Apricots in a variety of Washington wine barrels. Bottle conditioned with Brett. $20/750ml bottle, 2 bottle limit per person BONNE NUIT is a Belgian-Style Strong Ale aged in bourbon barrels. Brewed once a year to celebrate the coming of Winter, Bonne Nuit is a special collaboration with our dear friend and Beer-itual Advisor, Jerome Seipp. Bonne Nuit is brewed in the tradition of Belgian Strong Ales, but hopped in the American tradition with Centennial, Cascade, and Columbus. This version was then aged for one year in Kentucky bourbon barrels. $18/500ml bottle, 3 bottle limit per person Kegs of both beers will also be on tap when we open Friday. Bottle sales will be available starting at 12noon through the alley (WEST) entrance of the brewery. Please be mindful of any "No Parking" signs in neighboring lots as your vehicles can be towed if parked in clearly marked spaces. Thanks and we hope to see you Friday!

New Orleans, we love you. After some tricky logistics getting our beer around the city, we had some great events and met some wonderful people. Thanks to everyone who took the time to come out to our events and chat, or seek our beer out. Big thanks to the incredible Avenue Pub, @steinsdeli, and Cochon Butcher . Also to all the small restaurants and bars down there that continue to be the definition of hospitality, thanks for keeping it real. We can’t wait to get back down to this incredible city!

IPA Collective Unconscious was brewed with Thomas Fawcett Maris Otter and German Pilsner malt along with flaked barley and flaked oats. It was hopped late in the boil with a beautiful lot of Nelson Sauvin as well as Galaxy and Mosaic. It was fermented with a blend of two of our favorite English yeast strains and then dry-hopped with a heavy dose Of Nelson and a lighter blend of Mosaic and Galaxy.

The Goat is our rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in our foudre with two saison strains and brett, then allowed to age for three months. The Goat was refermented in the bottle with brett, and has been conditioning for four months. Although we plan to brew The Goat again, there will never be a batch like this, and we don’t have immediate plans to ferment another batch in the foudre or to age it for so long before release. This batch has white wine notes from the brett, opening up with pear, mint, and oak. Bone dry and 4.9% ABV, this beer is wonderfully effervescent, perfect for summer drinking.
