Today at 3pm, we're releasing THE DEATH OF MEMORY, a blend of beers fermented in oak with a captured wild culture. Since early 2016, we've been experimenting with and developing a captured wild yeast culture that produces many of the characteristics we enjoy in our favorite spontaneous beers. This is one of the more straightforward base beers we make, brewed simply with Pilsner malt, wheat, and aged hops, which allows the culture to shine through. These batches were fermented entirely in oak wine barrels, and left to age between one and two years before blending, bottling, and conditioning with Brettanomyces. $17/750ml bottle, 3 bottle limit per person This is a very limited run, so we'll only be tapping 1 keg of The Death of Memory today when we open. Available until it's gone.

Today we're releasing BEYOND LIFE AND DEATH, our oak-fermented Witbier. Beyond Life and Death is a Belgian-Style White Ale brewed with Pilsner malt and a blend of flaked and malted wheat. It was hopped with Saphir, Saaz, and Cascade, and steeped with coriander, tangerine peel, and orange peel before undergoing fermentation in oak puncheons with our house Wit strain. After aging in oak for a number of months, it was bottle conditioned with Brettanomyces. $12/750ml bottle Available in bottles and on draught when we open at 3pm.

Today at 3pm, we're releasing 2019 WETWIRED DOUBLE IPA!! Brewed once a year in collaboration with our good friends @cloudburstbrew Wetwired is a Fresh/Wet Hop IPA exclusively featuring Mosaic hops from @perraultfarms This year we decided to up the ante and create a Double IPA version of Wetwired brewed with Pilsner and Two Row malts, malted wheat, and flaked oats. We used over 600lbs of Fresh/Wet Mosaic hops, and utilized our mash tun as an additional hop back so that the beer was run through fresh hops at every point throughout the brewing process 2019 Wetwired will be on tap today at Holy Mountain (and tomorrow at Cloudburst) and we'll have a limited amount of pre-filled crowlers available to-go (limit 2 per person while supplies last) @spiritofgoodliving killed it with an updated design this year, so we'll have 2 versions of this new t-shirt design available in the Taproom as well. New Jerusalem started as a blend of oak aged, mixed fermentation beers, and was then racked on top of an enormous amount of Robada Apricots grown by our friends at Gilbert Orchards in Yakima, WA. It then went through a secondary fermentation on the Apricots in a variety of Washington wine barrels. Conditioned with Brett.

The Goat is our rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in our foudre with two saison strains and brett, then allowed to age for three months. The Goat was refermented in the bottle with brett, and has been conditioning for four months. Although we plan to brew The Goat again, there will never be a batch like this, and we don’t have immediate plans to ferment another batch in the foudre or to age it for so long before release. This batch has white wine notes from the brett, opening up with pear, mint, and oak. Bone dry and 4.9% ABV, this beer is wonderfully effervescent, perfect for summer drinking.
