Brewed exclusively with New York State hops and New York-sourced barley malt, Hopstate IPA is part of our Farmhouse Series, a line of beers that draws inspiration from our home on the site of a historic 140-acre hop farm. ⁠ ⁠ Hopstate IPA is a 7.4% ABV, 45 IBU IPA hopped with Cascade, Chinook, Michigan Copper, and Triple Pearl varietals and brewed with NY two-row malt and carasteam malt. It pours hazy pale orange with a lively white head. Bright citrus notes dominate the aroma along with vibrant floral hop character. As part of a Facebook poll, fan voting determined the style and name of the next beer. An Abbey Dubbel was selected and it is perfectly represented by the “two- headed” coin given to Arya Stark by Jaqen H’ghar, one of the “Faceless Men of Braavos” – legendary assassins with the ability to change their appearances at will. Valar Morghulis possesses a deep chestnut brown color with a persistent and creamy tan head. Rich aromas of caramel, toffee, ripe fruits and burnt sugar, with a hint of cloves. The taste is delicately balanced with rich malty sweetness, caramel and just enough bitterness to balance out its malty backbone. A surprisingly dry finish is light on the tongue, which belies the initial aroma. Malt: Our carefully crafted mixture of specialty malts. Valar Dohaeris Tripel Ale is the latest beer in the series and pays homage to Arya’s season-long struggles within and around the House of Black and White. Valar Dohaeris Tripel Ale is, much like a “faceless man,” not what it first appears to be; it shares the complexity of its sister-brew, Valar Morghulis Dubbel, and a strength masked and belied by its lighter color. Valar Dohaeris pours a beautiful copper-tinted hue with a full, fluffy white head. Sweet grain and honey are prevalent in the aroma. The flavor opens with a bright sweetness thanks to the Belgian candi sugar used in brewing. The finish is moderately dry and effervescent with just a hint of Belgian yeast character. Malt: Pils, Wheat, Oats, Flaked Barley Hops: Noble Varieties Pairs with rich pasta dishes like fettuccine alfredo and penne alla vodka. Brewed in the authentic style of Belgian winter, or noel beer, is dark, strong, malty and assertively spiced. It is not a lightweight beer, and is best sipped before a roaring fire, or on a sleigh ride over the hills to Grandma’s house. (Let someone else drive.)
