What's more important - the beer or the food? We say both. In fact, The Pelican Pub & Brewery is a world leader in the pairing of food and beer. We've been doing it for 16 years. Our executive chef and brewmaster make it their daily mission to understand how food and beer flavors complement one another.

Not only how the beer pairs with the food, but how to incorporate beer into preparing menu items in order to achieve the most flavor. It could be the Kiwanda Cream Ale batter in our famous Tower of Rings, the Beer Blanc sauce that tops our blackened cod or the brownie sundae made with Tsunami Stout. Whatever you order, there has been thought put into how our beer can be integrated into the dish to create a unique culinary experience.

Our beers are awarded medals, plaques and honors from around the globe. You'll find our core beers here along with a continual rotation of seasonal and small batch brews by our award winning brewing team.

This seasonal IPA is sure to ruffle some feathers and send true hop-heads looking for cover. To get us through the rainy season in the Pacific Northwest, we’ve brewed a New-World India Pale Ale using exclusively Austriallian grown Ella hops. The use of Ella hops offers an aroma that is filled with gooseberry and bright fruit. The fresh and zippy Ella hops are nicely balanced by a clean and light pale malt character. We’ve liberally dry hopped Umbrella twice to add to it’s distinct and complex flavors. Go on, reach for an Umbrella and let it pour.

For this commanding version of MacPelican’s Wee Heavy we took our award winning Wee Heavy and laid it down in Washington Wheat Whiskey barrels from Dry Fly Distilling in Spokane. Imperial Pelican Ale is a classic Pacific Northwest IPA. We’re not exactly objective, but we consider this beer to be among the top tier of craft brews – and it’s won enough medals to prove it! Imperial Pelican is one of our first core beer styles (originally named “India Pelican Ale”) and we think of it as part of our own heritage in a bottle. Huge Cascade hop aroma, subtle malty sweetness, and a spicy, citrusy flavor; this ale is all that a Northwest Imperial Pale Ale should be.

To showcase the glory of the Mosaic hop, our brewers built a simple malt bill of two-row malted barley and a touch of malted wheat—then added loads of prized Mosaic hops. This minimalist approach lets the incredible tropical citrus hop aromas and sweet pine hop flavors come through with clarity and focus. On the finish, the clean bitterness is balanced by just enough malt character to ensure that the next sip is a foregone conclusion.

Our American Brown Ale has a dark brown color, with a balanced aroma of roasted malts and Northwest-grown hops. The sweetness of the ale and crystal malts blend beautifully with the assertive flavors of Cascade and Mt. Hood hops. A brew to be savored. This beer originated as a prize-winning homebrew many years ago. When Darron, the Head Brewer, began designing the beers for the Pelican Pub and Brewery, he adapted his old 5 gallon homebrew recipe to his new 15 bbl (465 gallon) brewery. It was well worth the effort, for not only has the Doryman's Dark Ale been a perennial favorite here at the Pelican Pub, but it has garnered prestigious professional awards.

Our Saison du Pélican is exceptional on its own; when aged in local gin barrels from our friends at Ransom Distillery, it takes on a whole other dimension of flavor. The fruity and spicy aroma of the farmhouse Belgian yeast, herbaceous Goldings hops, and the well rounded malt character of Saison du Pélican pairs exquisitely with the huge botanical infusions imparted by Ransom Distillery’s Old Tom gin barrels. ”Old Tom Gin is a historically accurate revival of the predominant Gin in fashion during the mid 1800's.” - Ransom Distillery It has been mentioned that the distillers only bottle the “heart of the hearts” (best portion of distillate), which is why we dubbed our barrel-aged Saison “The Queen of Hearts.”

Score: 3.67
Volume I of Berried at Sea navigates to a whole new realm of fruit beer. Charting a course away from the typical citrus or raspberry, Pelican Brewers instead explore the darker side of fruit beer. The beer begins its voyage as the renowned Tsunami Stout before making a port of call in oak barrels where it takes on its precious cargo of Northwest-grown blackberries and currants and re-ferments to become Berried at Sea. With an aroma of dark chocolate and tart berry, the first sip sails across the palate to finish with tart fruit and a pleasing cocoa-like dryness. Best enjoyed after swabbing a deck or before walking the plank!

Our latest seasonal takes inspiration from the high-flying clouds of a summer day. We imagined the perfect beer for a lazy afternoon spent gazing at the sky and started with a crisp, fruity Belgian-style pale ale. To that they added aromatic, citrusy orange peel to create an elevated sensory experience. What do you see when you look up at the clouds? We see happiness… and an occasional pelican charting his way.
