Gran Missionario celebrates the intersection of cultures that occurred in the missions set up all along the Pacific Coast of the Americas. Wheat and muscat wine grapes were among the plants brought over from Spain, being tasty as well as essential for church services. Flaked wheat and oats add a rich creaminess to our base beer, substantial at 8.3% alc/vol. To that we add muscat of Alexandria, an “aromatic” grape grown at the Spanish missions. They have a perfumy, spicy quality that punches through the wheat and malt flavors. In honor of the many other crops grown in Mission gardens, we’ve chosen pears for this version of Gran Missionario. The beer is creamy, off-dry and fruity in a most complex way, with aromas of flowers and spice. A new hop variety, Hallertau Blanc, adds additional fruity aroma notes, complementing our Belgian yeast strain.

And the versions most popular in the Latin community are made with frozen fruit juice in a wide variety of tropical flavors. We though this would be a perfet inspiration for a line of summer beers. But these are not kiddie treats. In addition to pure, high-quality fruit pulp, we add a number of delicious spices and other flavors that build on the fruits, adding complexity and depth. They’re still a lot of fun and amzazingly quaffable at only 3.5% vol. A large proportion of wheat gives them a smooth, creamy mouth-feel. There’s really never been anything like them. Paletas are meant as summer refreshers—a more sophisticated alternative to one-dimensional shandies and radlers. We’re brewing them as a series, each one different, and when one’s gone, it’s gone. We brew the next one. At the end of summer, they vanish until next year. We hope never to repeat ourselves. Our first paleta features Gauva with pink peppercorns and tarragon. For fall, we wanted to make a beer that celebrates the spirit of the harvest season. The name means “Life and Death,” which reflects the seriousness that agricultural people placed on the harvest, an important thought to reflect on at this time of year. We owe our lives to nature and our ability to harness the natural world to our advantage, but it is not entirely a matter of will. Larger forces prevail. The beer itself is loosely based on an Oktoberfest/märzen style, a rich, caramelly beer. Our version, which we call a “müerzen,” is fermented with ale yeast for a slight fruitiness, and has some very nontraditional ingredients in it. First is dulce de leche, a delicious milk caramel popular throughout Latin America. It brings a delicate carameliness to the beer, plus a touch of milk sugar, which being unfermentable, adds a very slight sweetness to the finished beer. In addition, we chose some spices to give the beer a delicate spiciness that is a bit reminiscent of graham crackers. Vida y Muerte es nuestra cerveza para el Día de los Muertos. 5 Grass is a bright hoppy ale with the fresh outdoorsy aroma of the desert. A smooth backbone of malt showcases complex, piney and citrusy hop aromas and a brisk bitterness from a variety of unusual hops. Spices and herbs added include juniper, two kinds of sage, rosemary and Tasmanian pepperberry for uniquely refreshing notes. It’s a subtle combination, making for a unique and complex beer that is highly drinkable and great with many kinds of food. 5 Grass is not exactly a pale ale; its malt profile is smoother than the classic style, and the hops are neither British or Cascadian in character. Existing styles are pigeonholes we’d rather not be caught in. In Aztec mythology, 5 Grass (Macuilmalinalli) is one of the 5 Gods of Excess (Ahuiateteo) and reminds us that all living things form a grand community that is counting on us to do our part as thoughtful, caring stewards and good neighbors to all life.

As part of our “Chingonas” series of beers, we thought lulo would blend well with the fruitiness of Galaxy hops. We kept the recipe fairly simple and let the fruit and hops do the talking. When we decided to collaborate with Cigar City, the ideas quickly took on a Cuban theme - specifically cuisine. The result is a pair of beers, this one being brewed with the super-ripe platanos maduros. With several layers of dark malts providing a rich base, the caramelized plantains offer a creamy texture and delicious taste. El Bizarron is the hero of a Cuban folktale, a simple worker who outsmarted the devil, winning his freedom, as well as, a load of silver, kicked to the heavens loaded on his faithful burro, way up high where he knew the devil couldn't follow.

Arroz con leche is a common and quite delicious rice pudding found all over Latin America. Our liquid version is luscious in texture and features a base of super-pale malt along with jasmine rice that brings a gentle nuttiness, a handful of wheat and oats for creaminess, sweetened condensed milk, almonds and raisins, and finished with a pleasant touch of vanilla bean and Mexican cinnamon. Ponche is a tradition common in Mexico and elsewhere in Latin America. It varies quite a lot, but there's always a lot of fruits and a few select spices. Our version translates into a barleywine-style ale, with plenty of rich caramel malts, plus muscat and concord grapes, apple juice, orange peel and some select and subtle spices. Oh, and of course a good handful of hops. There's no big story, just a warm and inviting beverage to share with family and friends and celebrate the bonds that hold us all together. Ponche may be savored in a small snifter or short tulip at about 50 degree F. Or, for a wintertime treat, try gently warming it and serving it in a mug with a stick of Mexican cinnamon. A dab of whipped cream wouldn't be out of the question.

A chance encounter between our two breweries led to a realization of some common values and a collaboration was born. It turns out that juniper from the cool North and mango from the torrid South are soul mates, amplifying each other and blending perfectly in this characterful pale ale. Motueka, Pacific Jade and Hallertau Blanc hops add to the beautiful piney and fruity aroma. The name is a mashup of our brewery names: Nøgne Ø means “naked island.” It has been an honor to work with Norway’s first and most important craft brewery.

Missionario is a unique white wheat beer with Muscat grapes and California "Aldrich" almonds added for a complex, layered flavor. Missionario is inspired by the pioneers who set up outposts from Patagonia north to California. They brought what they needed from the Old World; first and foremost was the wheat and wine needed for the sacrament, but many other crops followed.
